History
The restaurant opened in 2000, founded by Joseph Kustra, who was born in Croatia in 1942 and emigrated to the United States in 1968. He had worked fifteen years at Peter Luger's in Brooklyn and as captain at the Helmsley Palace in Manhattan, and had opened the Tollgate Steakhouse in Mamaroneck, New York, in 1995. Kustra retired in 2019 and sold the restaurant to Frederick 'Fritz' Blasius, an automobile dealer from Waterbury.
